Healthy Dinners: Vegie Stir Fry

I love stir fry so I decided to make it this weekend when Gavin and I were staying at his parent's house while they were away. I made chicken separately for Gavin but didn't cook it with the veggies because I don't eat meat.





I used a wok to cook the veggies. I decided to use zucchini, peppers, brocoli, eggplant and carrots. I made the rice first since that took about 40 minuets.

I oiled up the wok and put in some soy sauce while I cut up the veggies.

I love colorful food, don't you?! :)



I cooked Gavin's chicken at this time. I chopped up a chicken breast and just put some low sodium soy sauce and teriyaki sauce on it and pan fried it.


Hello yummy guys. I let them cook for about 30 minutes. I didn't stir a lot and I added a touch of sugar!

I laid it over a bed of rice. It was SO easy to make and a very low maintenance recipe. I could continue watching "Say Yes to the Dress" and isn't that what we all want on a Saturday?
